Southwest Portobello Mushrooms
In preparation for Vegan fest 2025 we are working on creating some vegan dishes that incorporate our spices in unique and creative ways. I had these portobello mushrooms sitting in my refrigerator for way to long and wanted to make something delicious with them. This recipe features 2 of our tarot card spices blends, The Magician in the sauce and Death on the patties.
Ingredients
Bun
I used store bought vegan buns
Olive Oil
Portobello Patties
4-5 inch portobello cap, stem removed
1 teaspoon Death tarot card spices blend
Drizzle of olive oil
Toppings
Green pepper diced
Red pepper diced
Onion diced
olive oil
The Magicians Aioli
1 cup extra virgin olive oil
1/2 cup unsweetened soy milk
1 tablespoon The Magician tarot card spices blend
1 clove of garlic
1/4 tablespoon lemon juice
Equipment
Large frying pan
Medium mixing bowl
Immersion blender
Instructions
Cook toppings
In a large fry pan heat a tablespoon over medium-high heat
Fry onions for about 1 minute
Add peppers and saute for about 5-7 until al dente
Set aside
The Magicians Aioli
In a medium mixing bowl add all of the ingredients
Blend with an immersion blender until emulsified
Fry the mushrooms
In the same frying pan, dry fry the portobello mushrooms, until they are brown and crispy
Then add dash of olive oil and coat the mushrooms
Set aside to rest and cover with Death tarot card spices blend
Bun
Brush the buns with olive oil and toast in a hot oven for 5-7 minutes
Finish and Plate
Spread The Magicians aioli on the top and bottom bun
Stack a small layer of the topping
Add the portobello mushroom
